Fresh Matsutake Grade #1

The #1 Grade Matsutake is the Japanese standard and the only acceptable grade for gifts. The cap is somewhat open with a veil that is fully intact. Unfortunately, there is the possibility that the veil may break in transit. It usually only happens with large orders. We honestly send very good quality mushrooms and the veil is intact before we ship. If they appear to be ready to have the veil break they get put in the 2,3 mix.   There will be a slice in the stem to check for bugs. Please understand that we may send you mushrooms that we checked for bugs, but we don't always see them, so in route, it is possible that there will be bugs when you get them. If you do find some, please let us know. We do our best to make sure you do not get any. We do apologize if that happens.

The #2, 3 grade mix has a larger cap, it is more economical for those who only want the matsutake for eating, not for appearance. Please do not choose this grade if you want them for appearances.
The under 2.5 inch matsutake is very small, and does not have a veil yet, it is a button. It has no shape yet, and is considered a dink. This is another economical way to purchase your matsutake for eating only, not for looks.

We do not clean the matsutake before shipping, otherwise they dry out fast and do not last long. When they arrive, wrap them completely in a moist cloth and place in a strainer, not in plastic, keep the cloth moist until you are ready to use them, this helps them stay fresh longer and helps the veil from breaking. The veil needs moisture or it will break very soon after we ship. We would love to wrap them in a moist paper towel, but the water will ruin the box.  Clean them with a clean, wet sponge when you are ready to use them, do not run them under water.
