Matsutake

For a unique taste sensation, try the matsutake mushroom. Matsutake means "pine mushroom." It grows most abundantly along the coast of Washington state, where it is found in quantities that permit commercial exportation to Asian markets where they command high prices. The matsutake has also been found in Canada, Oregon, Idaho and Northern California. This meaty delight is either white or brown with a thick cotton-like partial veil. Its surface is smooth and dry, and its stem is short and broad. When in doubt, its odor is what identifies this mushroom – very spicy and clean.
