Frozen European Porcini
Fresh Frozen European Porcini This is a great way to enjoy european porcini. It is difficult to get fresh european porcini here in the states, and the season is so short. So we carry frozen to enjoy year 'round. We have chefs that purchase them frequently.
The best way to enjoy them is to put what you need into a non stick, lightly oiled pan, and cook them on low until the water is mostly evaporated. After they are defrosted, use them in your recipe.
You can also place what you need into the refrigerator 24 hours before you need them so they can defrost that way. Do not refreeze after thawing them. Use only what you need, keep the rest in a sealed bag in the freezer. You can store your cooked or defrosted porcini in the fridge for 24 hours for best flavor, any longer and the quality deteriorates.
