Wild Mushroom Soup

Ingredients:
- 1/2 lb fresh wild mushrooms (chanterelles, shitake, boletes, morels) or 2oz. dried
- 1/2 lb fresh button mushrooms sliced
- 2 tablespoons butter
- 1/4 cup minced red onion
- 1-4 garlic cloves minced
- 1/2 cup minced fresh parsley
- 5 cups chicken stock
- 2 tablespoons lowfat sour cream
- 2 tablespoons half & half
Instructions:
- Trim wild mushrooms & slice.
- In large stock pot melt butter, saute onion, garlic, & parsley until soft.
- Add mushrooms & saute 5 min.
- Add stock & seasonings & bring to a boil. Reduce heat, cover and cook the soup 10 min.
- In small bowl combine sour cream & half & half, add to soup. Heat on low.
