Fettuccini Alfredo and Wild Mushrooms

Ingredients:

  • 1/4 cup butter or margarine
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 4 ounces mixed sliced wild mushrooms
  • 1 package (9 ounces) fresh fettuccini
  • 1/4 cup white wine
  • 1 1/4 cups 1 percent milk
  • 1 package (3 ounces) Neufchâtel cheese
  • 2 tablespoons grated Parmesan cheese
  • 1/2 teaspoon salt
  • Pinch of grated nutmeg
  • 2 tablespoons chopped parsley

Instructions:

  1. In large skillet, melt butter over medium heat. Add onion and garlic and cook 6 to 7 minutes. Stir in mushrooms and cook 4 minutes.
  2. Cook fettuccine according to package directions.
  3. Add wine to skillet and boil 1 minute. Stir in milk, Neufchâtel, Parmesan, salt, and nutmeg.
  4. Toss cooked pasta with sauce. Sprinkle with parsley.
