Fava Bean Pesto and Morels on Toast

Ingredients:

  • 12 peeled fava bean pods
  • 12 fresh morels, sliced in half
  • 1 shallot, peeled and finely chopped
  • 2 tablespoons of good butter
  • Handful of fresh broad leaf parsley
  • Good olive oil
  • Good bread
  • Salt and pepper to taste

Instructions:

  1. Boil salted water. Reserve about 6 fresh fava beans. Add the rest of the fresh fava beans and boil them until nearly soft, but not completely without texture.
  2. Put the boiled fava beans into a food processor. Add olive oil, parsley, and salt and pepper to taste. Turn this into a pesto and set aside.
  3. Heat about 1/8 cup of olive oil in a pan. Add the chopped shallot and sauté until translucent. Lower heat.
  4. Add butter. Add morels. Cook until tender, adding a little water as needed. Set aside.
  5. Toast good bread. Spread the fava bean pesto on the bread.
  6. Add the fresh fava beans and the sautéed morels. Correct salt. Serve.
