Candy Cap Cheesecake Bars

Ingredients:
- 1 sleeve graham crackers
- 3 tbsp maple syrup
- 3 tbsp melted butter or oil
- 16 ounces softened cream cheese
- 1 cup sugar
- 3 eggs
- 1/4 cup heavy cream
- 1 tsp vanilla
- 1 tbsp crushed, dried candy cap mushrooms
Instructions:
- Pulse graham crackers in a food processor until finely ground. Add maple syrup and melted butter or oil; pulse until evenly moistened.
- Press into the bottom of a lightly greased 9-inch square baking pan. Bake at 350°F for 8-10 minutes, or until lightly browned.
- For the filling, beat softened cream cheese. Add sugar, scrape sides, and beat until combined.
- Beat in three eggs, ONE AT A TIME. Add heavy cream, vanilla, and crushed candy cap mushrooms. Scrape the sides and mix until combined.
- Pour the filling onto the hot crust. Bake about 30 minutes, until the filling is set, but the center is still a little loose.
- Let cool on a rack 45 min-1 hour. Refrigerate at least 3 hours, until thoroughly chilled. (Makes 16 bars)
