Black Trumpet Mushroom Quiche

Ingredients:
- 1 pie crust (store-bought or homemade)
- 1 cup black trumpet mushrooms, cleaned and chopped
- 1 tablespoon olive oil
- 1 small onion, diced
- 1 cup shredded cheese (Gruyère or Swiss work well)
- 4 large eggs
- 1 cup heavy cream
- Salt and pepper to taste
- Optional: fresh herbs like thyme or parsley
Instructions:
- Preheat your oven to 375°F (190°C).
- Place the pie crust in a 9-inch pie dish and prick the bottom with a fork.
- In a skillet, heat olive oil over medium heat. Sauté onions until translucent, then add mushrooms and cook until tender.
- Spread the mushroom mixture evenly over the pie crust.
- Sprinkle cheese over the mushrooms.
- In a bowl, whisk together eggs, cream, salt, and pepper. Pour over the cheese and mushrooms.
- Bake for 35-40 minutes or until the quiche is set and the top is golden brown.
