Wild Mushroom Soup

Ingredients:

  • 1/2 lb fresh wild mushrooms (chanterelles, shitake, boletes, morels) or 2oz. dried
  • 1/2 lb fresh button mushrooms sliced
  • 2 tablespoons butter
  • 1/4 cup minced red onion
  • 1-4 garlic cloves minced
  • 1/2 cup minced fresh parsley
  • 5 cups chicken stock
  • 2 tablespoons lowfat sour cream
  • 2 tablespoons half & half

Instructions:

  1. Trim wild mushrooms & slice.
  2. In large stock pot melt butter, saute onion, garlic, & parsley until soft.
  3. Add mushrooms & saute 5 min.
  4. Add stock & seasonings & bring to a boil. Reduce heat, cover and cook the soup 10 min.
  5. In small bowl combine sour cream & half & half, add to soup. Heat on low.
