Candy Cap Cheesecake Bars

Ingredients:

  • 1 sleeve graham crackers
  • 3 tbsp maple syrup
  • 3 tbsp melted butter or oil
  • 16 ounces softened cream cheese
  • 1 cup sugar
  • 3 eggs
  • 1/4 cup heavy cream
  • 1 tsp vanilla
  • 1 tbsp crushed, dried candy cap mushrooms

Instructions:

  1. Pulse graham crackers in a food processor until finely ground. Add maple syrup and melted butter or oil; pulse until evenly moistened.
  2. Press into the bottom of a lightly greased 9-inch square baking pan. Bake at 350°F for 8-10 minutes, or until lightly browned.
  3. For the filling, beat softened cream cheese. Add sugar, scrape sides, and beat until combined.
  4. Beat in three eggs, ONE AT A TIME. Add heavy cream, vanilla, and crushed candy cap mushrooms. Scrape the sides and mix until combined.
  5. Pour the filling onto the hot crust. Bake about 30 minutes, until the filling is set, but the center is still a little loose.
  6. Let cool on a rack 45 min-1 hour. Refrigerate at least 3 hours, until thoroughly chilled. (Makes 16 bars)
