Black Trumpet Mushroom Quiche

Ingredients:

  • 1 pie crust (store-bought or homemade)
  • 1 cup black trumpet mushrooms, cleaned and chopped
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1 cup shredded cheese (Gruyère or Swiss work well)
  • 4 large eggs
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Optional: fresh herbs like thyme or parsley

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Place the pie crust in a 9-inch pie dish and prick the bottom with a fork.
  3. In a skillet, heat olive oil over medium heat. Sauté onions until translucent, then add mushrooms and cook until tender.
  4. Spread the mushroom mixture evenly over the pie crust.
  5. Sprinkle cheese over the mushrooms.
  6. In a bowl, whisk together eggs, cream, salt, and pepper. Pour over the cheese and mushrooms.
  7. Bake for 35-40 minutes or until the quiche is set and the top is golden brown.
  8. Let it cool slightly before serving. Enjoy!
