Sauteed Morels

Ingredients:

  • 1 bowl of dried morels
  • 1/4 cup good quality olive oil
  • 1 spoonful diced raw garlic
  • 1 thinly sliced red onion
  • Splash of brandy (or rum)
  • Shavings of a hard cheese (Asiago works well)
  • Pinch of smoked Yakima Salt

Instructions:

  1. Soak dried morels in water for at least 24 hours, then drain for 1 hour.
  2. Put the morels one by one carefully in a saute pan, with the olive oil, heated to medium (Do not use a non-stick pan).
  3. Add the diced raw garlic and thinly sliced red onion.
  4. Saute until the garlic and onion are brown and morels are crispy.
  5. Pour a splash of brandy (or rum) into the saute pan, light, and flambe.
  6. Let the alcohol cook off (just a few minutes), then put all ingredients in a serving bowl.
  7. Top off with shavings of a hard cheese and a pinch of smoked Yakima Salt.
